Succotash with Bacon

Succotash header.jpgI love succotash, my husband loves succotash. I love bacon, my husband loves bacon. Are you catching my drift here? Its good and we love it.

For the succotash you will need: celery, onion, frozen green beans, cherry tomatoes, bacon, frozen corn, cumin, garlic, salt and pepper.

Cut your bacon into 1/2″ pieces and saute until crispy. Set aside on paper towel.

Green beans and onion.jpgIn the same pan sauté garlic, diced onion, diced celery and green beans.

Succotash done.jpgAdd corn and saute for another two minutes, then add your tomatoes and cook for another 30 seconds. Add bacon and season with salt and pepper and serve!

Summer Succotash with Bacon

6 slices of thick-cut bacon,  1/2″ thick pieces
½ cup finely diced yellow onion
1 teaspoon finely chopped garlic
1 green beans
2 cups fresh corn kernels
1 pint cherry tomatoes, halved
Kosher salt and freshly ground black pepper


In a large skillet over medium heat, add bacon and cook until crispy and the fat is rendered, about 6 to 8 minutes. Remove from heat and using a slotted spoon, transfer bacon to a paper-towel-lined plate to drain. Reserve bacon fat in pan.

Return pan with bacon fat to medium heat. Add onion, garlic, celery and green beans until soft, 2 to 3 minutes. Add corn and cook for another minute. Toss in cherry tomatoes, cook for another 30 seconds. Season with salt and pepper. Add bacon, taste and adjust seasoning with salt and pepper and serve.
