Pizza on a Friday night=better
Homemade pizza on a Friday night=the greatest thing you will ever have
Okay, maybe I’m exaggerating a little bit but this is one of my favorite Friday night dinners.
For the dough you will need: flour, yeast, salt and water
In a bowl or glass combine warm water and yeast. Let stand for 5 minutes.
Meanwhile combine your flour and salt in a large bowl
When the yeast and water is nice and frothy it is ready.
Mix together your liquid and flour until combined. It will be flakey.
Dump out dough onto a lightly floured surface and knead for 5 minutes. Its kinda of therapeutic.
Form dough into a ball. Lightly oil the bottom of the bowl, place dough into bowl and lightly il the top. Set aside to rise until doubled, about 3 hours.
Yeast is an amazing thing isn’t it?
Dump out onto clean surface. Using a pizza cutter cut the dough into 4 equal pieces.
Use corn meal instead of flour to keep your dough from sticking to the surface. Roll the dough out.
I roll mine quite thin. Like 1/8″ of an inch.
Picking up your pizza dough like you would pie dough, place onto a lightly greased piece of tin foil onto of a cookie sheet or pizza wheel. Roll and stack the other three pieces of dough, use a greased piece of tin foil between each to ensure they don’t stick. Place into freezer for at least 30 minutes to ease getting them onto the grill.
Once your grill is nice and hot, mine was at about 650 degrees. Cook until the bottom is golden brown. The dough will get some air bubbles while it cooks, just use a fork or spatula to pop them and push the dough back down.
Remove your dough from the grill and place uncooked side down. Top your pizza with whatever your heart desires.
Put pizzas back on the hot grill. Close grill and cook until cheese is all gooey and melty.
Let pizza rest for a minute before cutting. This is the time when you pop open a beer.
Perfect Pizza Dough
2 cups warm water
4 1/4 tsp yeast
5 1/2 cups flour
1 tsp salt
Mix water and yeast. Let stand 5 minutes.
Combine flour and salt. Add yeast mixture, mix until combined.
Turn out onto flour surface and knead 5 minutes. Place in large bowl and cover with towel.
Let rise until doubled in size, about 3 hours.
Cut into 4 equal pieces, roll out into pizza shape. Place rolled out dough onto lightly greased tin foil, layer tin foil and dough. Freeze for at least 30 minutes.
Cook pizza dough on ver hot grill. Once the bottom is golden brown remove from grill. Top grilled size. Place back on grill until cheese is melted. Enjoy!
