I love my crock pot. Whoever invented it should receive an award. Having dinner ready when we get home from after school activities is a godsend. This week I made pulled pork for sandwiches in my crock pot and oh boy was it delicious.
For this wonderful dinner you will need: 2 onions peeled and halved, a 2 lb pork shoulder(pork butt), paprika, chili powder, garlic powder, cayenne pepper, brown sugar, and salt & pepper
Put your halved onions on the bottom, rub your pork but with the spices and turn your crock pot on low for 7 hours.
7 hours later dinners ready. Pull the meat out and shred it. I also shredded one of the onion halves and mixed it in the meat. Return to the crock pot, mix up the meat with the juices and serve with your favorite BBQ sauce on buns.
I will use any excuse to eat Kings Hawaiian rolls. And I love pulled pork on them. I also prefer a mustard based BBQ sauce instead of ketchup based.
Crock Pot Pulled Pork
1/4 cup brown sugar
1 tablespoon chile powder
1 tablespoon paprika
teaspoons garlic powder
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon cayenne pepper
1 pork shoulder roast (also called pork butt)
4 onions, cut into halves
Stir together the brown sugar, chile powder, paprika, garlic powder, salt, black pepper and cayenne in a small bowl. Rub the mixture all over the pork shoulder. Wrap the pork in plastic wrap and refrigerate for several hours or preferably overnight.
Place the pork in crock pot on a bed of the onion halves. Cook on low until fork-tender and falling apart, about 7 hours. Remove the pork from the pot and set it on a cutting board.
Shred the meat with two forks, then toss in the juices sauce until it’s coated. Serve on hamburger rolls with your favorite BBQ sauce!
