Juicy Delicious Turkey Burgers

I’ll be honest, a year ago I would have not dreamed of making a decent turkey burger. Dry grainy meat immediately comes to mind. But ya’ll this recipe seriously changed my mind. The zucchini and red onions keep the meat so moist and flavorful and when cooked on the grill there is the added smokiness and outer crunch. Even my five-year old loves these. Lets do this.

The guests of dinner: burger rolls, italian bread crumbs, red onion, zucchini, minced garlic, ground turkey and salt and pepper. Romaine lettuce and tomatoes for the toppings. I picked up these beautiful tomatoes from our local product stand and couldn’t wait to use them!

In a food processor combine 1 zucchini cut into large chunks and 1/4 cup red onions.

Food process the zucchini and red onion to a fine dice.

In a large bowl add the zucchini mixture, ground turkey, bread crumbs and garlic. Season with salt and pepper.

Form patties. Keep them pretty thin to ensure they cook through. This recipe makes 4.

Cook the patties. I like them the most on the grill. I did spray the grates with oil spray to help them not stick. If it is rainy or cold they can definitely be cooked on the stove in a skillet. Cook for about 5 minutes per side.

Once cooked through serve on a burger bun with whatever toppings your little heart desires. I chose tomatoes, romaine, red onions and mayonnaise.

Here’s the complete recipe:



5 oz grated zucchini (when squeezed 4.25 oz)

1 lb 93% lean ground turkey

1/4 cup seasoned whole wheat breadcrumbs*

1 clove garlic, grated

1 tbsp grated red onion

1 tsp kosher salt and fresh pepper

oil spray


In a food processor combine zucchini and red onion until pea sized. Squeeze ALL the moisture from the zucchini with paper towels, or cheesecloth. In a large bowl, combine ground turkey, zucchini, breadcrumbs, garlic, onion, salt and pepper. Make 4 equal patties, not too thick so they cook in the center.
To cook indoors: Heat a large nonstick skillet on high heat. When hot, lightly spray oil. Add burgers to the pan and reduce the heat to low. Cook on one side until browned, then flip. Flip over a few times to prevent burning and to make sure the burgers are cooked all the way through.
If grilling: Spray with oil spray to prevent sticking. Cook the burgers on medium heat about 5 minutes on each side, or until no longer pink in the center.
